Willy’s World Famous Alfredo Sauce
This is my take on a classic sauce that you can add to any of your favorite white sauce dishes.
Prep Time: 15 Min
Yield: about 2.5 Cups
Ingredients:
- 4 TBSP of Butter
- 1/4 Chopped Onion
- 1 TBSP Minced Garlic
- 2 TBSP Flour
- 1 Cup of Chicken Broth, Knorr Pollo or other
- 1 Cup of Milk
- 1 Shot of White Wine (optional)
- 8 oz of Monterey Jack
- 1 TBSP of Parmesan
- 1 TSP Ground Black Pepper
- 2 TSP of Salt, add to taste
- 1 TSP of Italian Seasoning
Instructions:
- Melt the 4 TBSP of butter in a large saucepan on low heat and slightly brown the garlic and onion for a few minutes
- Once golden brown, add in the flour and mix it together until it forms a paste
- Throw in the shot of White Wine to deglaze (optional)
- Quickly add the chicken broth, milk, and seasonings then turn up to medium and bring to a low boil while stirring
- Once at a low boil, add the parmesan and Monterey Jack cheese in handfuls while continuing to stir, adding in more cheese as the previous handful melts.
- Once all the cheese has melted,it should be a slightly thick consistency.
- Taste it and add salt if necessary
- Let it cool slightly before topping a pasta or mix in a cooked pasta now.
